It holds the first place in the category of superfoods. It is fished in the clear blue waters of the Amvrakikos gulf with its special biological characteristics. It is produced from (Bafa) the female mullet and after pickling it is traditionally dried in natural beech wood, and then waxed with natural beeswax.
